This is what I call ‘back a yard’ cooking. It is everything I love about homestyle cooking, making the most of what you have, with simple resources. It is cultivation, masterful creation, a respect for mother nature. There is something special about a coal fire, it reminds me of Jamaica; smoky roasted yam or break fruit with steamed fish, delicious. Always best eaten with your fingers. These guys are Mr Macs allotment neighbours and they invited us to share in their dinner. I was beyond excited, kind of delirious really because I had secretly wished we’d have the opportunity to be part of their family gathering. We ate out of crafted calabash with matching forks and afterwards washed it down with fresh cups of delicious fresh sorrel (hibiscus).
